I promise, it tastes just as good as it looks :)
One of the first things I think of when I think of summer is fresh fruit. I love it. Last night my sister and I whipped up some delicious strawberry shortcake!
Here's the recipe my mom got several years ago from my aunt!
Strawberry Shortcake:
Cake:
1 1/2 cups of Bisquick baking mix
1 egg
2 tablespoons of shortening or oil
1/2 cup of sugar
1/2 cup of cold milk or water
1 teaspoon of vanilla
Strawberry Topping:
Quart of strawberries, washed and sliced
Sugar
Water
I always make the strawberry topping earlier in the day so the strawberry juice has more flavor. To do this, place the washed and sliced strawberries in a bowl. Add enough water to make a juice and sprinkle with sugar. For lack of a better word, smash the strawberries with a fork. Put them in the fridge to marinate.
For the cake, beat all the ingredients together. Grease and flour an 8x8 or 9x9 inch pan. Bake at 350 degrees for 30-35 minutes. (I always stick a toothpick in the center of the cake. If it comes out clean, it means it's done.) Let it cool.
Cut the cake and plate it! Some of my family members put a scoop of ice cream on top (That's yummy, also :)) Then drizzle with the strawberry topping. I put whipped cream on mine, too! Enjoy!
